Structural Steel – Restaurant Remodel

Case Study

A local restaurant in Paso Robles underwent a major interior remodel that required new structural steel to support the updated layout and ceiling design. J&M Welding was brought in to fabricate and install steel members that integrated cleanly with the existing structure while keeping the project moving alongside framing, MEP, and finish trades.

Because restaurant remodels often involve tight footprints, open ceilings, and heavy coordination between systems, this project required clear communication with the design team and careful planning to ensure everything landed exactly where it needed to.

Process

1) Field Measurements & Shop Drawings

We started by verifying dimensions onsite and documenting true conditions. From there, we produced shop drawings reflecting field-verified measurements for review and approval. This step was essential to prevent expensive rework once steel was cut and delivered.

2) In-House Steel Fabrication

After approvals were finalized, steel components were fabricated in-house to match the approved shop drawings. Building in the shop allowed us to control quality, keep welds consistent, and prep components for efficient installation.

3) On-Site Installation & Coordination

Our crew installed the structural members onsite and coordinated around other trades working in the space. The goal was accurate placement, clean integration with framing, and minimal disruption to the remodel timeline.

Challenges

The biggest hurdle was that initial architectural measurements didn’t match real-world field conditions. That created a domino effect:

  • Steel locations had to be verified in the field

  • Shop drawings required multiple updates

  • Revisions triggered resubmittals and approvals before fabrication could begin

  • Coordination was critical to avoid conflicts with ceiling framing, mechanical runs, and lighting

In other words: the building had opinions, and they were not the same as the plans. 😉

Result

The installed steel created a solid backbone for the restaurant’s new interior layout and open-ceiling design. Most importantly, the project moved forward with confidence once field conditions were verified and drawings were aligned—eliminating the risk of steel landing in the wrong place or clashing with other systems.

This early project photo captures the restaurant remodel during the framing and coordination stage, before the structural steel package was fully installed. With walls opened up, insulation exposed, and ceiling systems visible, this phase was critical for comparing the design drawings against actual field conditions. Because the initial architectural measurements did not fully match the site, this stage required careful verification of dimensions, connection points, and structural relationships before fabrication could move forward. It also shows the level of coordination needed on a restaurant remodel, where steel placement has to work cleanly alongside framing, glazing, electrical, and mechanical systems.

This updated mid-project photo captures structural steel installation in progress as field modifications are being made onsite. A crew member works from a lift to adjust and fit the steel within the restaurant’s open ceiling area, with sparks visible during cutting or welding. The image highlights the reality of remodel work: once field conditions differ from the original plans, steel often has to be carefully revised and coordinated in place to align with framing, mechanical systems, and the final layout. This phase was critical to keeping the project structurally sound while adapting to real-world site conditions.

This closer angle highlights how the structural steel was integrated into the surrounding wall framing and overhead building systems during the remodel. The image shows the steel member in place while electrical runs, ceiling framing, and adjacent structural elements continue to take shape around it. This was one of the most important coordination points in the project, since the steel needed to satisfy revised field conditions while still supporting the design intent of the remodel. The final placement helped create a solid structural backbone for the new restaurant layout, while preserving the clearances and alignment needed for the next phases of construction.
